For those of you who grew up in a Mexican household, there’s a good chance you grew up eating chilaquiles. To us, chilaquiles is not just a breakfast dish, it’s a product of love that brings with it the smells and fond memories of watching our mothers and grandmothers preparing dishes of chilaquiles for the whole family on weekend mornings, utilizing left over salsas and tortillas. It’s a dish well known and loved throughout the Mexican community, and for good reason – it encapsulates part of the Mexican lifestyle. The word “chilaquiles” comes from the ancient Nahuatl (language of the Aztecs) word for chilis and greens. While each region and family household had their own take on this classic dish, it is commonplace to see chilaquiles garnished with sour cream, queso fresco, raw onion rings, and avocado slices.
In 2009, Los Chilaquiles set out to create and serve chilaquiles that, not only incorporated the traditional elements that make up this dish, but also allowed our customers to customize and create their own version of chilaquiles. While you still can get a classic chilaquiles served with beans and eggs, we sought to give our customers more options, thus giving the options of adding various meats (all cooked in-house) such as carnitas or shredded beef, to name a few.
It hasn’t been easy, but with over 8 years of operation, our goal has always been to, not only serve delicious homemade chilaquiles, but more importantly bring more exposure to a beloved dish within the Mexican community by sharing it with the wider, diverse demographic of Los Angeles.
While we’re completely family-owned and run, our hope is to expand and bring our chilaquiles to a city near you.
